AVOCADO GRAPEFRUIT SALAD
Eileen and Tim Jacobs told me about this wonderful salad at the last dining out and I had to share it with everyone.

AVOCADO GRAPEFRUIT SALAD:
1 large Florida avocado, diced,
1 large grapefruit, peeled, seeded and diced;
1/4 cup finely sliced red onion;
1/2 head radicchio, washed and chopped;
1 1/2 cups arugula, washed and torn into bite size pieces;
1/2 teaspoon tarragon;
2 tablespoons flax oil ( you can use olive oil if you wish);
2 tablespoons balsamic vinegar;
2 tablespoons Bragg's aminos.
Mix together all ingredients and serve on a bed of tender bib lettuce.
Variation: Make a meal out of this salad by adding grated soy cheese, or some lentil sprouts and walnuts and serving it with some whole grain bread. Also, the organic mixed lettuces from publix works as well as the other greens ).

Will Tuttle
will be returning to the Space Coast in February 11th at 2 PM at the Cocoa Beach
Public Library, 550 N. Brevard Avenue, Cocoa Beach. Will is introducing his new book The
World Peace Diet. It can be purchased on Amazon or Will's web site http://willtuttle.com/.
Tuttle digs deep into the underlying basis of our eating habits and their consequences. You will
come away with a much deeper understanding of why we must change our diets if we want to
live in harmony with ourselves and this planet.
Come early as Will's events are always well attended. As usual we will be providing some tasty
veggie treats.

Core Group Meeting
Next Meeting will be held at 7:30 on February 28 at the Satellite Library Public Library. (these
meetings are normally held on the fourth Tuesday of the month at the Sat Beach Library and
occasionally at member's homes)

. Hear Farmer Harold Brown
recount his experiences of growing up on a cattle farm and the series of events that lead him to
becoming an animal advocate.
March 18th at 2 PM, at the Cocoa Beach Public Library, 550 N. Brevard Avenue, Cocoa Beach.
Farmer Brown is a dairy farmer gone vegan, who was featured in the Peaceable Kingdom
Documentary and now works for Farm Sanctuary.

Amending HPoB Operating Agreement
At our Core Group meeting on 1-24-06, it was moved to amend the Healthy Planet of Brevard
Operating Agreement to make it easier to manage contributions.
The change reads:
Membership may be counted either from the beginning of whatever month the member
submits the specified contribution, to extend for one year, or from January 1st of the year, in
which case membership contributions received after June thirtieth will be pro-rated at half the
annual fee. The choice of either method will be left up to the Membership Manager, with a
concurring vote of the Core Group Managing Members.

If you are a member and have no objection to this amendment, do not reply. If you oppose it or
have a question, please email or contact a Core Group member. If 40% or less of our members
oppose this change, then it shall be adopted at the February Core Group meeting.

Hosting Opportunities> Got a spare bedroom?
HPOB is looking for volunteers to host out of town speakers. In order to conserve money and
provide a more more personal environment for our distinguished guests, HPOB typically houses
visiting speakers in private homes rather than hotels. If you are interested in hosting future

HEALTHY PLANET OF BREVARD MINUTES - JANUARY 24, 2006

The core group of the Healthy Planet of Brevard met at the Satellite Beach Library at 7:30 pm.
In attendance were core members Eric Fricker, Barbara Bingnear, Judy McCluney, John
Cielukowski, Marcie Katz, and Vicki Murfin. In addition we were delighted to have attending
members Ginger and Mike McCurdy and Lesley Brindley.

Vicki read the minutes of the last meeting in Claris' absence.

DINING OUT - Barbara said Feb 4 is the next dining out at Magnolia's in Satellite Beach. The
menu is:

Appetizer: Fresh organic artichokes stuffed with chargrilled eggplant, citron scented Spanish
olives, and roasted leeks-served with citrus/saffron heirloom tomato sauce, balsamic reduction,
and lemon thyme.

Salad: Spring mix with blackberry/pecan vinaigrette

Entree: Chargrilled exotic wild mushrooms with roasted Russian banana fingerling potatoes,
baby fennel, sugar crisp carrots, rutabaga, micro herbs, and tangy vegetable juice reductions..

The price is $25 which includes tax, tip, coffee, tea, soft drinks (not espresso/cappuccino, bottled
water or alcoholic beverages).

NEWSLETTER - Eric plans to note in a newsletter that we do not want any soliciting of
members by E-Mail.

EVENTS - Vicki handed out Cocoa Beach Library flyers for musician/author, Will Tuttle. The
event is Februray 11 and Will is discussing his newly released book, The World Peace Diet. We
will all bring delicious healthy snacks.

March 18 Farmer Brown will speak at the Cocoa Beach Library. He will recount his experiences
of being a cattle farmer and why he changed to a vegan farm animal advocate. Healthy snacks
will be served by us.
Gainesville can't take Harold Brown on Sunday. We are seeking other groups in the event they
might want him to speak on Sunday. Barbara is asking a friend about Vero Beach and Vicki is
asking Chas for referrals in So. Florida.
Healthy Planet is paying Harold's plane fare of about $300. Eric Fricker and Lesley Brindley
have offered to host Harold. Vicki will take Harold back and forth to the Orlando airport.

Dr. Michael Greger responded by E-Mail that his 2006 speaking schedule and book about the
Avian Flu isn't ready yet. He will let us know a date.

Vicki suggested HPOB purchase a film series from the 2005 Healthy Lifestyle Expo. It is called
GET HEALTHY NOW. It is a 3 DVD set with cooking demos and speeches by Dr. McDougall, Dr.
Neal Barnard, etc. It was suggested that the Cocoa Beach Library might buy this . John made a
motion for us to buy it (if need be) and Eric seconded. The motion passed.

Suzanne Elliot has offered to help us get speakers. She knows a lot of people on national AR
circuits. We are grateful for her offer. Speakers suggested were Geroge Eisman, Paul Watson, an
athlete... like Carl Lewis and Dennis Kucinich !

Treasurer - Judy reported our blalnce at $1870.72.

MEMBERSHIPS - Marcie wants to triple our membership by next year to equal 120 members.
Judy's address will be on membership forms. At events Marcie will always encourage people to
join. Eric will have members respond to a change in the bylaws about membership in a
newsletter. It will amend the HPOB Operating Agreement to make it easier to manage

SUGGESTIONS - Ginger felt a lot of greeters were necessary at social events (like TFT) to
make new people feel welcome. Everyone agreed.

February 28 at the Satellite Library.
