Thanksgiving day greeting card I recieved this card from Joel at Sunseed Food Coop in Cape Canaveral. Very cute. They were great and we took some home with us. Thanks for all the work. Vegan Pumpkin Pie Filling 1 can (15 oz) 100% pure pumpkin (no sugar or spices added) 1/2 tub (8 oz) water-packed silken tofu such as Nasoya (don't use the boxed tofu - it will taste chalky) 3/4 cup sugar 1 tablespoon cornstarch 3/4 teaspoon cinnamon 1/2 teaspoon nutmeg 1/4 teaspoon ginger 1/8 teaspoon cloves 1/2 teaspoon salt 1. Process sugar in a food processor until fine powder. Add cornstarch and spices, pulsing to blend. Set aside in a mixing bowl. 2. Mix canned pumpkin and silken tofu in food processor until well blended. Add the sugar mixture and mix until no visible streaks. 3. Pour into prepared pie crust of choice and bake at 350 degrees F about 1 hour, or until the filling is nicely browned and begins to crack. Good Luck and Enjoy! Susan Rizzo's recipes Susan Rizzo made the tasty Tofu Turkey at the Turkey-free Thanksgiving dinner. Here are her recipes. I really liked that gravy. :-) Tofu Turkey with Nut Stuffing This is a Café favorite for festive occasions. When served with cranberry sauce, Tofu Turkey gives the illusion of the real thing! 3 lbs. firm tofu ½ cup soy sauce ¼ cup water 1 tsp. ginger powder ½ tsp. garlic powder Slice tofu lengthwise - 6 slices per pound. For the marinade, mix together soy sauce, water and spices. Place the slices in the marinade and leave for 15 minutes. Bake on an oiled cookie sheet at 350EF. until tofu turns brown on one side. Set aside and make nut stuffing. Nut Stuffing 1 medium onion chopped 1 cup chopped celery 2 Tbsp. oil or safflower oil 2 Tbsp. sesame seeds 1¾ cup whole wheat bread crumbs 1 cup finely chopped walnuts 2 Tbsp. soy sauce 1½ tsp. sage ¾ tsp. thyme sea salt to taste (optional) Saute together the onion and celery in oil. Add all of the spices and cook until the celery is tender. If the mixture starts to stick, add a little water. Take off the heat and add all of the other ingredients. Mix together well and pat this stuffing mixture into patties about the same size as the tofu slices. Place one stuffing patty between two slices of baked tofu - brown side in. Bake on an oiled cookie sheet at 350EF. for 15 minutes or until golden brown. Serve with mushroom gravy and cranberry sauce. (serves 9) Mushroom Gravy 1 lb. sliced mushrooms 1/3 cup soy sauce or braggs aminos 2 Tbsp. oil or safflower oil ½ cup mirin 4 cups water ½ cup unbleached flour blended with ½ cup water Saute mushrooms in oil until they change color. Add water, soy sauce and mirin and bring to a boil. Simmer for 10 minutes. Add the flour-water mixture while stirring constantly until it thickens. Turn to low and simmer 5 minutes more. HPoB Turkey-free Thanksgiving Reminder Years ago I read in one of John Robbins books that most Americans willeat more fat on Thanksgiving day than most people in the world will eatin the entire month of November. Our Turkey-free Thanksgiving Celebration is a gentle and healthy way to show that the alternative can be tasty and fun. Please join the members of Healthy Planet of Brevard for a completely plant based Thanksgiving dinner, with music provided by the Indian River Blue Grass Boys.Please carpool to the event as parking may be tight. Members shouldbring a vegan covered dish to share, remember to leave the meat, eggsand dairy at home.
